 Supermarket rotisserie chicken comes together with sweet grapes and savory bacon in a fast, fresh dinner. This dish uses just half of a rotisserie chicken. Shred or slice the leftover meat and use in a sandwich, quesadilla, or pasta dish for another quick meal.

Ingredients:
    8 slices bacon, cut into 1/2-inch pieces
    1 rotisserie chicken (about 2 1/2 pounds)
    1/3 cup low-fat plain yogurt
    2 ounces blue cheese, crumbled (1/2 cup)
    3 tablespoons finely chopped chives
    1 garlic clove, minced
    Coarse salt and ground pepper
    6 ounces red-leaf lettuce, torn into bite-size pieces (8 cups)
    1 cup seedless red grapes, halved

Directions:
    In a medium skillet, cook bacon over medium, stirring occasionally, until fat is rendered and bacon is crisp, about 9 minutes. With a slotted spoon, transfer bacon to paper towels to drain.
    Meanwhile, shred half the chicken, discarding skin and bones. You should have about 2 cups meat. (Refrigerate remaining chicken, covered, up to 3 days.)
    In a medium bowl, mash together yogurt and cheese with a fork. Stir in chives and garlic and season with salt and pepper. In a large bowl, toss together chicken, bacon, lettuce, and grapes. Divide among four plates and serve with yogurt dressing.

 This dish benefits the eyes: The spinach, corn, and avocado all deliver on either lutein or zeaxanthin, or both. Other antioxidants present include vitamin E (almonds), selenium (chicken), and catechins (grapes).

Ingredients:
    3 tablespoons white-wine vinegar
    1 tablespoon Dijon mustard
    Coarse salt and ground pepper
    1 pound chicken cutlets
    1 teaspoon ground coriander
    1 bunch flat leaf spinach
    1 cup seedless organic red grapes, halved
    1/2 medium shallot, thinly sliced
    1/4 cup sliced almonds, toasted
    2 ears corn, shucked and removed from cob
    1 avocado, halved and thinly sliced

Directions:
    In a large bowl, whisk together 3 tablespoons oil, vinegar, and Dijon; season with salt and pepper. Set aside.
    In a large nonstick skillet, heat remaining tablespoon oil over medium. Sprinkle chicken with coriander; season with salt and pepper. Cook (this may need to be done in batches), turning once, until opaque throughout, 4 to 5 minutes. Transfer to a cutting board and let rest for 5 minutes; slice thinly crosswise.
    Add chicken, spinach, grapes, shallot, almonds, and corn to bowl with dressing; toss to combine. Top with avocado. Serve immediately.

    8 thin slices higher-welfare pork belly
    2 handfuls stale bread, sugar-lump sized pieces, crusts removed
    3 fresh anchovies
    juice and zest of 2 lemons
    extra virgin olive oil
    1 sprig fresh flat-leaf parsley, chopped
    2 cos lettuces
    a few cherry tomatoes, washed
    Parmesan, shavings
    sea salt
    freshly ground black pepper

Method:
This is a brilliant idea for a picnic with a handy homemade sachet of dressing.
Lay the pork belly slices on a non-stick baking tray and bake in the oven or under the grill for about 20 to 30 minutes or until cooked, golden brown and crispy.
Remove the pork, chop the strips into chunks or leave whole, if you wish. Set aside. Toast the bread cubes in the pork fat under the grill until brown and crispy.
Dress the anchovies with a little lemon juice and zest, extra virgin olive oil and some chopped flat-leaf parsley. To make a dressing for the salad, use 3 parts extra virgin olive oil to 1 part lemon juice and season it well with salt and pepper. Line a cup with cling film, pour the dressing in, gather up the edges and tie in a knot. Now you have a homemade sachet of salad dressing!
Trim the lettuce back until you get to the pale inner leaves. Wash well and spin dry.
Take a leaf of cos lettuce and fill it with croutons, pork, tomatoes, Parmesan and an anchovy. Prick the bag and drip some salad dressing over the top and tuck in!

Directions:
    Cook couscous according to package instructions. Whisk together orange zest plus juice, olive oil, and vinegar. Season with salt and pepper. Toss with couscous, grapes, and celery stalks and leaves; season with salt and pepper.
